Head Chef: NRMA Blue Dolphin Resort Yamba

• Take charge our brand new Food Truck concept - a Kitchen on wheels with attitude!!
• Bring the service closer to guests at our very own on site cafe and bar. 
• Reporting to the Resort General Manager, this exciting newly created role, will ensure exceptional food experiences and service to all guests at NRMA Blue Dolphin Resort. 

You will work closely with the Resort Manager, kitchen team and front of house team to ensure our guests receive, good, honest, food - the opportunities are endless!   This role requires a strong culinary background, leadership capability to motivate and lead your team. and a passion for delivering exceptional food experiences.  You will also form part of the Resorts head of department structure to collaborate, communicate and lead consistency across all areas.

What you will do: 

• Lead a kitchen team with clarity, direction, enthusiasm and a hands on approach 
• Menu Development & Execution: Develop and refine menu items, ensuring consistent quality and presentation.
• Kitchen Management: Oversee all kitchen operations, including food preparation, cooking, and sanitation.
• Team Training & Supervision: Train and supervise kitchen employees, ensuring adherence to recipes and standards.
• Quality Control: Implement and maintain strict quality control measures to ensure food safety and customer satisfaction.
• Inventory & Cost Control: Manage food inventory, minimize waste, and control food costs.
• Effective management of the department roster  
• Look to source local and cook fresh  

What you will bring: 

• A formal qualification in commercial cookery is essential
• Previous experience in a Lead or Head position in a restaurant, club kitchen, resort, cafe, or bistro
• Experience in ordering and stock control 
• Effective verbal communication
• Willing to be part of a greater team and jump in to assist the team and lead from the front
